Located within the subregion of Sierra de Flores Magón, San Jerónimo Tecoatl is one of the state of Oaxaca’s 570 municipalities. This localidad and municipality’s name comes from the Náhuatl language and translates to “serpent drawn in stone”. Most coffee-growing families here manage less than 1 hectare of sparsely planted land. The 17 producers who contributed their coffee to this community micro lot delivered anywhere from 12 to 100 kg lots.

The municipal capital sits at 1,800 m.a.s.l and the majority of the coffee plots are situated at lower altitudes and all around the village, on the surrounding slopes. Most farms have old-stock Typicas and Bourbons that produce very little cherry. Known for its cold and cloudy climate and rare days of full sunshine during the coffee processing season, fermentation and drying times tend to be on average longer in this part of far northern Oaxaca than in other neighboring communities where Osito also sources coffee.

Due to the high altitude and relatively cooler microclimate, fermentations can last from 2 to 4 days. Drying times are also slow due to the lack of sunlight and predominant cloudy weather. The average drying time is 8 days on cement patios and woven petates.
