Edison Elías Muñoz has been growing coffee for the last 30 years in the municipality of San Agustín, located in the southernmost part of Huila. His farm, Finca Pensilvania sits at 1,768 m.a.s.l. and spans a total surface area of seven hectares, all of which are currently producing coffee. Edison utilises both washed and natural post-collection processing. His washed process uses a double fermentation, with the first fermentation or oxidation done with the cherry intact in plastic barrels for 48 hours, after which the coffee was de-pulped and fermented again for 36 hours in a tank, then rinsed.
